Moliterno al Tartuto,

Layered Snack

Ingredients for 4 people:

-8oz Moliterno al Tartufo

-1.3lb Bread

-8.5oz Beef Tartare

-12oz Red Onions

-120ml Water

-3 Tablespoons Apple Cider Vinegar

-2 Teaspoons Cane Sugar

-Evo Oil

-Salt

-Peppercorn

Preparation:

In a saucepan, heat extra virgin olive oil over medium heat.

Add sliced onions, then every 2 minutes add the following ingredients: apple cider vinegar, cane sugar, salt, 60ml of water, and peppercorn.

Add remaining water, then remove pan from heat and let it rest from few minutes.

Blend mix until creamy and smooth and put it aside.

 

Cut 8 slices of bread, then cut each slice into round shape with the help of a cookie cutter (about 4 inches in diameter)

Gently oil each slice; Heat a pan over medium heat, when hot oil grates with a paper towel, then grill each side until golden.

 

Cut 6 slices of Moliterno al Tartufo then with the same cookie cutter, slice Moliterno al Tartufo into circles

 

Now, let’s compose our snack in the following order: Bread, Moliterno al Tartufo, Beef Tartare, Moliterno al Tartufo, Bread.

 

Garnish with red onion cream.
